- 4 bone-in chicken thighs (skin-on)
- 8 oz fresh mushrooms (button or cremini), sliced
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil (for searing)
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Season the chicken thighs generously with salt and pepper on both sides.
- In a large skillet over medium-high heat, heat olive oil until shimmering. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and sear the other side before transferring to the baking dish.
- In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 4-5 minutes until tender.
- Pour in heavy cream and chicken broth, adding thyme, salt, and pepper. Stir well and let it simmer for about five minutes.
- Pour the creamy sauce over the seared chicken in the baking dish and bake for 25-30 minutes or until the internal temperature reaches at least 165°F (74°C).
- Allow to rest for a few minutes before serving, drizzling additional sauce on top.
