  • 4 bone-in chicken thighs (skin-on)
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil (for searing)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken thighs generously with salt and pepper on both sides.
  3. In a large skillet over medium-high heat, heat olive oil until shimmering. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and sear the other side before transferring to the baking dish.
  4. In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 4-5 minutes until tender.
  5. Pour in heavy cream and chicken broth, adding thyme, salt, and pepper. Stir well and let it simmer for about five minutes.
  6. Pour the creamy sauce over the seared chicken in the baking dish and bake for 25-30 minutes or until the internal temperature reaches at least 165°F (74°C).
  7. Allow to rest for a few minutes before serving, drizzling additional sauce on top.
