  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup flour
  • 2 large eggs, beaten
  • 1 ½ cups Italian-style breadcrumbs
  • 2 cloves fresh garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Dredge each chicken breast in flour, dip into beaten eggs, then coat thoroughly in breadcrumbs.
  4. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for about 3 minutes on each side until golden brown.
  5. Place seared chicken in the baking dish. Spoon marinara sauce over the top and sprinkle with mozzarella and Parmesan cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
