- 4 large flour tortillas
- 2 cups shredded cheddar cheese

- 2 tbsp taco seasoning

Instructions
- Heat a skillet over medium heat. Add ground beef, onion, and garlic; cook until browned (about 5 minutes). Drain excess fat.
- Sprinkle taco seasoning over the beef mixture and stir well; add a splash of water if necessary.
- Lay a tortilla on a clean surface. Place some beef mixture on one side, top with cheese, fold sides in, and roll tightly from bottom to top.
- Heat vegetable oil in a deep skillet to around 350°F (175°C). Fry chimichangas seam-side down until golden brown (about 3 minutes). Drain on paper towels.
- Serve hot with dollops of sour cream and sides of salsa.
