- 1 cup cherry tomatoes (halved)
- 1 ripe avocado (diced)
- 1 can black beans (15 oz, rinsed and drained)
- 1 cup corn (fresh or canned)
- 1 cup shredded cheddar cheese
- Juice of 2 limes
Instructions
- Preheat grill or skillet over medium-high heat. Brush chicken breasts with olive oil and season generously with southwest seasoning.
- Cook chicken on the grill or skillet for about 6-7 minutes per side until fully cooked (internal temperature should reach at least 165°F). Let rest for 5 minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, black beans, corn, and diced avocado. Toss gently.
- Sprinkle shredded cheddar cheese over the salad mix and drizzle fresh lime juice to enhance flavors.
- Slice rested chicken into strips and lay atop the salad. Serve immediately.
