  • 2 tsp olive oil
  • 2 tbsp southwest seasoning (blend of chili powder, cumin, paprika)
  • 6 cups mixed greens (romaine and spinach)
  • 1 cup cherry tomatoes (halved)
  • 1 ripe avocado (diced)
  • 1 can black beans (15 oz, rinsed and drained)
  • 1 cup corn (fresh or canned)
  • 1 cup shredded cheddar cheese
  • Juice of 2 limes

Instructions

  1. Preheat grill or skillet over medium-high heat. Brush chicken breasts with olive oil and season generously with southwest seasoning.
  2. Cook chicken on the grill or skillet for about 6-7 minutes per side until fully cooked (internal temperature should reach at least 165°F). Let rest for 5 minutes before slicing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, black beans, corn, and diced avocado. Toss gently.
  4. Sprinkle shredded cheddar cheese over the salad mix and drizzle fresh lime juice to enhance flavors.
  5. Slice rested chicken into strips and lay atop the salad. Serve immediately.
